Diamond Fruit Strudel is a delicious dessert that will be a wonderful completion to any dinner. A sweet berry filling wrapped in layers of thin, crisp, buttery dough sandwiched with crisp breadcrumbs, and then baked until it’s golden brown and flaky.

Ingredients:

The secret to this great berry filling is adding a tart, grated apple to give the filling more texture and body.

Dough:

  • 7 cup flour
  • 1 tb baking powder
  • 5 eggs
  • 2 cup sugar
  • 1 and 1/2 cup margarine
  • vanilla
  • 2 oranges peel
  • 2 lemons
  • 1 ts almond extract

Fruit Strudel:

  • chopped matzo
  • 10 grated apples
  • 1/4 c raisins
  • 1 lemon juice
  • 1 preserved pineapple grinned
  • 2 tb sugar
  • 1 tb cinnamon

Method (Dough):

  • In a large bowl, combine flour and baking powder.
  • Mix eggs, margarine and sugar and add to flour.
  • Stir in other ingredients.
  • Knead the dough until it is soft and elastic.
  • Divide the dough into 6 parts for 3 Strudel with different fillings.

Fruit Strudel:

  • Roll out a piece of dough into rectangle or into the form of baking form.
  • Sprinkle with chopped matzo.
  • Combine grated apples, pineapple and sugar, cinnamon and lemon juice.
  • Spread the filling on the dough piece evenly.
  • Cover with another piece of dough and pinch the edges.
  • Cut out a small rhomb in the center.
  • Bake in a preheated oven (175C) for 30 minutes.
