When talking of healthy desserts such as zephyr, marmalade it is impossible not to mention oatmeal cookies. Rich in slow carbs, moderately sweet and nutritious, it is a favorite of many adherents of healthy nutrition. Today oatmeal cookies are prepared with oat flakes with an addition of candied fruits, bananas, dried fruits and nuts. But initially cookies were a simple, non-sweet lean bread made from oatmeal and water.         

In Australia oatmeal cookies are called Soldiers’ or Army biscuits. There oatmeal cookies have become a special symbolic character, as they were a part of the soldiers’ rations during World War I due to the high energy value. Australians bake them as treats for the Veterans Day on April 25.

In tsarist Russia oatmeal cookies were a mandatory attribute at luxurious tea parties. In the noblest houses of St. Petersburg crispy oatmeal cookies were served as dessert. The cookies received wider popularity in the Soviet post-war years, when the treat began to be mass produced by confectioneries.

Today oat products become more and more popular because of their positive health benefits. Oatmeal is known to aid in digestion, and oat bread and oatmeal cookies without refined sugar are an excellent snack or a delicious energizing breakfast when paired with a glass of milk. There are a great number of recipes, because this category of desserts is the simplest, requires the least time and effort, as well as allowing space for culinary experiments. Depending on taste preferences you can cook “heavy” biscuits with butter and eggs, or more “light” with yogurt, cottage cheese, moderately sweet with dried fruits and so on.

Ingredients:

  • 5.3 oz oatmeal

  • 3.9 oz flour

  • 1 tsp baking powder

  • 0.7 oz raisins

  • 4.2 oz butter

  • 1 egg

  • 2 Tbsp sugar

  • 0.16 oz vanilla sugar

Directions:

Before cooking you need to get the butter out of the fridge so it is room temperature, and soak the raisins in hot water to make them swell and become soft.

Thoroughly beat together softened butter, eggs and sugar until combined well. You can use a mixer or a whisk. Add vanilla sugar, sift flour and baking powder.  

Stir in oatmeal and raisins, mix thoroughly and start forming the cookies. Lay cookies on a parchment or a baking sheet greased with oil and put in the oven preheated to 180 C0 (350 F0) for 10-15 minutes. Cool and serve.
