Potato Knishes are thick patties, as of mashed potatoes or chopped beef, and fried or baked.

Ingredients for preparing Potato Knishes:

  • 3 c mashed potatoes.
  • 2 ea eggs, slightly beaten.
  • 2 tb margarine.
  • 1 ts. salt.
  • Black pepper.
  • 1/3 c matzah meal.
  • 1 ea egg yolk beaten with 1 tb water.
  • Oil for baking sheet.
  • 1 ea onion.

Method:

  • In medium sized bowl, combine mashed potatoes with eggs, margarine, salt, pepper, and matzah meal.
  • Sautee a diced onion until brown and add to mixture.
  • Form into walnut sized balls.
  • Brush with a beaten egg yolk.
  • Place on a well-greased baking sheet and bake in a preheated oven for 20 minutes or until well browned.
