Potato Knishes are thick patties, as of mashed potatoes or chopped beef, and fried or baked.
Ingredients for preparing Potato Knishes:
Are thick patties
- 3 c mashed potatoes.
- 2 ea eggs, slightly beaten.
- 2 tb margarine.
- 1 ts. salt.
- Black pepper.
- 1/3 c matzah meal.
- 1 ea egg yolk beaten with 1 tb water.
- Oil for baking sheet.
- 1 ea onion.
Method:
- In medium sized bowl, combine mashed potatoes with eggs, margarine, salt, pepper, and matzah meal.
- Sautee a diced onion until brown and add to mixture.
- Form into walnut sized balls.
- Brush with a beaten egg yolk.
- Place on a well-greased baking sheet and bake in a preheated oven for 20 minutes or until well browned.
