This recipe is taken from ancient Jewish cookbook and was written in Old Slavonic language.
- 1 c rice.
- 3 tb butter or fat.
- 3 ea average apples.
- 3 tb raisins.
- 1/2 ts cinnamon.
- Salt to taste.
- Sugar to taste.
- Lemon zest.
- Water/wine.
Method:
- Scald rice with boiling water and cook in hot water with salt and butter.
- Peel and core apples and cut into 4 parts.
- Put apples in a melting-pot pour over water or better wine; add cinnamon, sugar, raisins and lemon zest.
- If apples are very sweet, add lemon slices or lemon juice.
- When rice is half cooked, add it to apples.
- Cook on low heat until done.
- Combine rice with apples carefully and sprinkle with sugar and cinnamon.
- This dish must be sweet.
