It’s Sunday morning and we were in the mood for a light and delicious, authentically Russian blini brunch. Having just come back from a honeymoon in Venice, it was time to give ourselves a break from the super sweet breakfast rolls and treat ourselves to something healthier. We had some fresh berries and just a bit of milk left from the cappuccinos we made earlier that morning.

Blinis are a totally traditional, and easy-to-make Russian dish. Using 100% natural, simple ingredients you can make a long or short stack of delectable Russian blini. See below for a complete list of ingredients and easy to follow instructions.

We used fresh berries as filling and topped it with a dollop of sour cream. Other sweet options include jams, preserves, poached apples, pears, or fresh apricots and peaches. Blinis are also delicious with savory fillings like ground turkey or chicken meat, cottage and farmer cheese, or even braised cabbage.

Ingredients:

  • 2 cups milk
  • 1/2 cups flour
  • Salt & Sugar (pinch)
  • 1 egg
  • Butter for frying

Instructions:

  • Combine milk, salt, sugar and flour in a bowl and mix well.
  • Incorporate one egg into the mixture and blend together. Consistency should be loose but not too runny. If needed, add a bit more flour.
  • Add a tablespoon of butter to a frying pan and place on medium heat.
  • Scoop batter into the pan and fry for 30 seconds on each side.
  • Add fresh berries (or other fillings) and roll blini up into a tube. Add a dollop of sour cream and enjoy!
