- 6 medium boiling potatoes
- 4 tablespoons unsalted butter or oil
- Salt to taste
- 1 tablespoon finely chopped fresh dill or parsley
Method:
- Peel and rinse the potatoes, and cut it in half lengthwise.
- Cut crosswise into scant 1/4-inch slices.
- Blot them dry with a towel.
- Melt the butter in 2 large heavy skillets (preferably nonstick).
- When it bubbles, add the potatoes and spread in a single layer.
- Saut over moderate heat for 5-6 minutes, or until the slices are golden on the bottom.
- Take care that the slices do not stick together or to the bottom of the pan, and that the butter does not burn.
- With a spatula turn the slices and saut for another 4-5 minutes on the other side, then sprinkle lightly with salt.
- Turn the potatoes again, sprinkle with salt, lower the heat, and combine to cook for about 10 minutes more, or until the slices can be pierced easily with a knife.
- Sprinkle with the chopped dill and served immediately.
