What is Fruit Kompot?

Kompot is a sweet fruit drink made with seasonal fruits or berries. Unlike fruit juice, kompot is prepared by simmering or boiling the fruits and adding a bit of sweetener like sugar, honey, maple or agave syrup.

In Russia and Ukraine fruit kompot  is a staple summer beverage. An abundance of stone fruit (apricots, plums, peaches), berries (cherries, mulberries, raspberries, wild blueberries) means you can experiment with lots of different flavors.

TIP: While fresh fruits are in season, try to find your summer fruit kompot ‘sweet spot’.

Once you get the hang of the basics, you can use dry fruits during the winter to reproduce this refreshing summer drink.

Ingredients

  • 3 Plums
  • 5 Apricots
  • 2 Peaches
  • 5 Cups Water
  • 2 Tbsp Maple Syrup (honey or brown sugar)

Instruction

  • 1. Wash and cut the fruit.
  • 2. Cut fruit into one inch cubes.
  • 3. Place fruit into large pot and add five cups (1 liter) of water
  • 4. Cover and bring to boil.
  • 5. Add 2 tablespoons of maple syrup (honey or brown sugar) to taste, and cook for another 10 minutes on medium heat.
  • 7. Let the kompot cool down completely, and refrigerate. Best when served chilled.
