Badymzhan Dolmasy is a traditional Azerbaijan dish, translated as stuffed eggplants. Eggplants are stuffed with lamb and greens. This is a delicious dish for anyone.

Dolma (dolma, sarma) – a dish which is a stuffed vegetables or leaves (usually grape), stuffed grape leaves. The filling is usually prepared on the basis of rice, may also contain cooked ground beef. Ingredients:

  • 1 kg eggplants.
  • 500 g lamb.
  • 100 g onion.
  • 2 ea tomatoes.
  • Melted butter.
  • Greens.
  • Salt.
  • Pepper.

Method:

  • Grind lamb and onion in a mincer, salt and pepper.
  • Fry mince meat in butter, stirring constantly, then put on a working surface and beat with a knife, add chopped greens and stir carefully.
  • Fill with mincemeat peeled and blanched eggplants.
  • Put then in a deep pan, cover with tomatoes.
  • Pour over broth or some water and stew for 25-30 minutes.
