Zucchini fritters are unbelievably easy to make, nutritious, low in calories, and a delicious way to enjoy summer vegetables. Popular in Russian cuisine, as well as in many other Eastern European regions — zucchini fritters (оладьи из кабачков) are not native to these parts of the world.

- Wash, peel and grate zucchinis. Place the grated zucchini into a colander to strain extra liquid. Let sit for a few minutes. You can even use a cheese cloth or paper towel to drain completely.
- In a large bowl combine zucchini, flour, and egg. Season with salt and pepper to taste. Mix well into a loose batter consistency.
- Heat up oil in a frying pan over medium to high heat. Scoop the batter with a tablespoon or using your hands into the pan. Make sure to leave enough room to flip the fritters. Fry until golden brown on each side — about 2-4 minutes.
- Serve immediately with a dollop of fresh sour cream or plain yogurt.
