Russian fried potatoes is the ultimate comfort food. With little prep time, here’s a recipe for a home made Russian pan fried potatoes with mushrooms.

Russians love potatoes and this is the season to experiment with fresh harvest recipes. Two weeks ago we explored mushroom hunting and the different kinds of delicious mushrooms that are available for cooking and pickling. This week we’re sharing a simple recipe for Russian pan fried potatoes and mushrooms.

This is a classic comfort food dish. Just like mac-and-cheese for Americans, Russian fried potatoes comfort the Russian soul. It’s what you turn to when you’re out of dinner ideas and just need something quick and delicious.

Ingredients:

Makes an awesome main dish with a fresh veggie salad, or side dish for grilled or roasted meat.

  • 2 medium potatoes
  • 1 medium onion
  • 1/2 lb mushrooms
  • 2 cloves of garlic
  • olive oil for frying
  • salt and peper, to taste

Instructions:

  • Peel potatoes, cut in half and then into 1/4 inch strips.
  • Place in water to reduce starch.
  • Slice onion and and mushrooms into half moons, about 1/8 of an inch.
  • Add olive oil to a large frying pan and place on medium heat.
  • Squeeze in two cloves of garlic to infuse the oil.
  • Stir in potatoes, salt and pepper to taste, cover and let sautee for about 7 minutes on medium heat.
  • Add mushrooms and fry on high heat for 2-3 minutes.
  • Garnish with fresh dill and serve hot.
